Any Occasion Chocolate Mud Cake

Ingredients: 250g unsalted butter 150g dark chocolate, grated 2 cups brown sugar 1 cup hot water (or 1 and 1/3 cups if not using whisky) |
¾ cup whisky 1 tablespoon instant coffee powder 1½ cups plain flour, sifted ¼ cup self raising flower, sifted ¼ cup cocoa 2 eggs lightly beaten |

Method: Combine chocolate, butter, sugar, water, whisky and coffee in a double saucepan and cook gently, stirring until smooth. Allow to cool to lukewarm. Add flour, cocoa, eggs and fold in. Bake in a moderate oven 180ºC (350ºF) for 1 hour. Allow to cool overnight. Once iced, use cake within 24 hours. |
